Buko (Coconut) Pandan is another sweet dessert that is very well known in the Philippines. Pandan is a fragrant plant, with its leaves used for flavouring in different dishes across South East Asia.
It is made up of shredded coconut meat (the flesh found in a coconut), pandan infused gelatine, double cream, condensed milk and panda extract.
Yes, it can be sweet and creamy, something that we, Filipinos like for a dessert. Although, we only really serve this on occasion and not on a frequent basis.
Here's the ingredients:
Packet of Green Gelatine Powder (to be mixed with 250g Caster Sugar or Plain White Sugar & 1 Litre of Boiling Water)
Few drops of Pandan Extract
Shredded Coconut
300mls Double Cream
1 Can of Condensed Milk
Optional: Cooked Tapioca
Procedure:
1.)Cook gelatine powder according to packet instructions. This will include sugar and a litre of boiled water then mix well until it is all well-combined.
2.)Then add a few drops of Pandan Extract.
3.)After all combined, place it in the Fridge and let it set for a few hours.
4.) Once it sets, slice it into cubes.
5.)For the mixture, pour the condensed milk in a mixing bowl, then add the double cream. Combine and mix it well.
6.)Add in the shredded coconut and mix it well.
7.)Lastly, add the cubed pandan gelatine and cooked tapioca (pre-cook the tapioca according to its instructions). Gently mix and combine it.
8.)You can add a few more drops of Pandan Extract for added taste.
9.)Then refrigerate it for a an hour or more to serve it best.
